3 Great Cinco de Mayo Party Ideas

May 27, 2008 - Leave a Response

Cinco de Mayo is a celebration of Mexico’s Independence from France back in the 1800′s. You can celebrate this occasion by adding a revolutionary flair to your party. Invite guests to come dressed as their favored historical figures from the Mexican Revolutionary War. You can fly the Mexican flag and use the colors in your decorating theme with streamers, napkins, lanterns and even tablecloths. You might even track down and play some old Mexican music or music about the revolution to play.

The Cinco de Mayo celebration is traditionally loud and raucous. You can add to that with noisemakers and fireworks. Though you may wish to hold your party somewhere without a lot of neighbors to annoy or else make the decision to end the party at an appropriate time. In place of fireworks you can also give the kids sparklers and snaps in order to entertain themselves. Or set up the always popular Piñata for the guests to take turns swinging at. It should be more than enough to get your party going.

Smoothies and Frozen Drinks – Secrets to Making the Perfect Frosty Summer Drink

May 23, 2008 - Leave a Response

What’s more refreshing than a frozen drink? If you’re looking for a delicious, healthy snack your kids will love, then a smoothie is a great choice. Or if you want to serve cooling refreshments to your summer guests, then a frozen drink is a real party pleaser. But there’s more to it than just tossing ingredients into a blender. Follow these secrets to making the perfect fruit smoothie or frozen drink and you’ll become an expert!

1. Freeze the fruit ahead of time. It doesn’t matter whether your smoothie recipe tells you to do this or not, this little trick will make for a thicker smoothie. Wash your fruit, cut in bite size pieces (slice bananas), spread out on a baking sheet in a single layer and freeze. When your fruit is frozen, you can pack it together in a storage bag or container in the freezer. For best results, use within 2 weeks.

2. Use fresh ripe fruit for the best flavor.

3. When the recipe calls for ice, crushed ice is best. If you don’t have crushed ice, you can always place ice cubes in a sealable plastic bag on a cutting board and “crush” the cubes with a hammer, rolling pin, frying pan, etc.

4. The blending order is important. First add the cold liquid, then the fruit, and last add the frozen yogurt (or ice cream) or the ice.

5. Considering using a Smoothie Maker. They really work! Unless you have a powerful blender, it will labor when pulverizing ice.

How to Fix a Less Than Perfect Recipe:

Making smoothies and frozen drinks is not an exact science. You can start with a recipe and always change and improve it. Here are some basic tips to adapt any smoothie recipe to your own tastes and requirements.

To make it thicker:
Add more ice, frozen fruit (especially a banana), frozen yogurt, ice cream or sherbet

If it’s too thick:
Add milk, water, or juice and blend again. Be careful when adding a lot of juice, because it will change the flavor of the frozen drink.

To make it creamier:
Use ice cream, frozen yogurt or vanilla yogurt instead of the ice.

To reduce calories:
Replace whole milk with skim milk. Use frozen yogurt or sorbet instead of ice cream. Add fresh fruit instead of sweetened frozen fruit. Use a sugar substitute. Choose nonfat yogurt over regular yogurt.

Beginner’s Guide To Vanilla Beans

May 22, 2008 - Leave a Response

Sadly, most home cooks use store bought vanilla extract when they need to amp up a recipe with vanilla flavor. Average grocery store vanilla extract is frequently composed of artificial vanilla flavoring, artificial colorings, corn syrup, etc. If you want to perfume your dishes with the most pure and potent vanilla flavor, the only choice is to use real vanilla beans. If you have never used fresh vanilla beans, do not be intimidated. Sourcing, choosing, storing, and using vanilla beans is actually quite simple.

Types Of Vanilla Beans
The most common types of vanilla beans are Bourbon (Madagascar), Mexican, and Tahitian, although you can find vanilla beans from several other areas including Hawaii, Jamaica, Indonesia, Tongo, and even India. Each variety of vanilla varies in potency, size, and color. Depending on the type of vanilla flavor you are trying to achieve will determine the best variety of vanilla bean to use.

Bourbon vanilla beans are prized for their deep, rich, well-rounded, full-bodied flavor. Bourbon vanilla beans are our preferred vanilla bean here at FoodRap. In our experience, Tahitian vanilla beans have a tendency to smell more flowery and lack the punch of the Bourbon vanilla beans. Mexican vanilla beans used to be considered the best in the world a long time ago, but presently, the quality of them is not always consistent or reliable.

The Ice Cream Sundae – It’s History

One of the most famous ice cream desserts would have to be the ice cream sundae. Next to the banana split, it is one of the most served ice cream desserts in the United States. A Sundae is just a bowl filled with ice cream and then topped with some type of sauce or syrup. The most common types of sundaes are chocolate caramel, butterscotch, or strawberry. Other toppings are placed on a sundae, but are not part of the orginal makeup. In fact, nuts, dairy cream, and cherries are just an addition to the wonder sundae.

A sundae is called a sundae because most local laws band Ice Cream sodas to be made on Sunday, so this treat was made to be eaten on a Sunday. It was stated that ice cream sodas were too “sinful” and the sundae is just perfect a Sunday afternoon.

The sundae is perfect because it wasn’t too indulging. It’s just one scoop of icecream with a little sweet topping. The spelling came from an old myth that a glass salesman gave Two Rivers canoe shaped bowls. To pay tribute to the bowls the e was used instead of a y. Or maybe the spelling of the sundae didn’t come from Two Rivers. It is also stated that it is spelled s-u-n-d-a-e so as not to disgrace the meaning of Sunday as a treat. Even though the sundae is easy to make, the history is hard to recall. In fact, many people are disputing where the treat came to life.

Do you know where the birthplace of the sundae is? There are various claims to this treat. One claim is that the sundae was invented in Two Rivers, Wisconsin, but they also took back their claim. It has also been claimed that the sundae was also first developed in Plainfield, Illinois, Evanston, Illinois, New York City, New Orleans, Louisiana, Cleveland, Ohio, Buffalo, NewYork, and Ithaca, New York.

However the rivalry is between Ithaca and Two Rivers. In 2006 the mayor Ithaca had dozens of complaints from Two Rivers about the claim to the title. It was a reponse to Ithaca after they claimed they had proof of the sundae orginality in their town. To Ithaca it is an honor that they will fight for. Two River’s claim that the sundae formed in their town because 1881 a soda jerk poured chocolate syrip over ice cream. It was sold only on Sundays in Two Rivers.

Ice Cream Cake

1 box yellow cake mix
3 large eggs
1/3 cup vegetable oil
2 quarts coffee (or any other flavor) ice cream, softened slightly

One hour before starting your cake, turn the freezer to its highest setting.

Heat oven to 350° F. Grease and flour two 8-inch round cake pans. In a large mixing bowl, combine the cake mix, eggs, and oil, along with the amount of water called for by the package directions. Beat until well combined. Divide the batter between the pans. Place the pans in oven and bake until a toothpick inserted into the center of the cakes comes out clean, about 35 minutes. Allow the cakes to cool for at least 10 minutes before removing them from the pans. Let the layers cool completely before assembling the cake.

Place one of the layers on an 8-inch cardboard cake round or a freezerproof cake plate.

Beat the summer heat with a mouth-watering ice cream for dessert!
